Ingredients
  

  • For the Chicken
  • 1 lb boneless chicken thighs or breasts
  • salt & pepper to taste
  • 1 tbsp cornstarch optional, for crispiness
  • 1 tbsp oil for pan-frying
  • For the Bang Bang Sauce
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey or sugar
  • 1 tsp rice vinegar
  • For the Fried Rice
  • 3 cups cold cooked rice
  • 2 eggs beaten
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 green onions sliced (optional)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp oil for cooking

Method
 

  1. Step 1: Season chicken with salt and pepper. Toss lightly with cornstarch if desired. Sear in hot oil until golden and cooked through. Brush with Bang Bang sauce and set aside.
  2. Step 2: In the same skillet, scramble eggs until just set. Remove and set aside.
  3. Step 3: Add peas and carrots to skillet. Sauté for 2–3 minutes until tender.
  4. Step 4: Stir in cold cooked rice, soy sauce, and sesame oil. Stir-fry 3–4 minutes until heated through. Fold in eggs and sautéed veggies.
  5. Step 5: Slice chicken and layer over the rice. Drizzle with extra Bang Bang sauce and garnish with green onions if using. Serve hot!

Notes
