- Step 1: Season chicken with salt and pepper. Toss lightly with cornstarch if desired. Sear in hot oil until golden and cooked through. Brush with Bang Bang sauce and set aside.
- Step 2: In the same skillet, scramble eggs until just set. Remove and set aside.
- Step 3: Add peas and carrots to skillet. Sauté for 2–3 minutes until tender.
- Step 4: Stir in cold cooked rice, soy sauce, and sesame oil. Stir-fry 3–4 minutes until heated through. Fold in eggs and sautéed veggies.
- Step 5: Slice chicken and layer over the rice. Drizzle with extra Bang Bang sauce and garnish with green onions if using. Serve hot!

For best texture, use day-old rice. Add red pepper flakes for extra heat or swap chicken for shrimp or tofu if desired.
