Ingredients
  

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 chicken breast diced
  • 1 tbsp soy sauce for marinating
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp vegetable oil
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 2 eggs beaten
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 green onions chopped, for garnish

Instructions
 

  • Step 1: Season diced chicken with 1 tbsp soy sauce, black pepper, and garlic powder. Let sit for a few minutes while you prep the other ingredients.
  • Step 2: Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken and cook until golden and fully cooked. Remove and set aside.
  • Step 3: In the same pan, sauté carrots for 2 minutes, then add peas. Cook for another 2 minutes.
  • Step 4: Push vegetables to one side of the pan. Pour in beaten eggs and scramble until cooked through. Mix with the veggies.
  • Step 5: Add rice and cooked chicken back to the pan. Stir in soy sauce and oyster sauce. Cook while stirring for 3–4 minutes.
  • Step 6: Drizzle with sesame oil, garnish with green onions, and serve hot.

Notes

Use day-old rice for the best texture. Add chopped bell peppers or mushrooms for extra veggies. For a gluten-free version, use tamari instead of soy sauce.
