Step 1: Cook pasta in salted boiling water until al dente (8–12 minutes). Drain and set aside, reserving ½ cup of pasta water.
Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add sliced chicken and season with fajita seasoning. Cook 5–7 minutes until browned and fully cooked. Remove and set aside.
Step 3: In the same skillet, add remaining oil and sauté bell peppers and onion for 5–6 minutes until tender and slightly charred.
Step 4: Lower heat to medium. Return chicken to the skillet. Stir in salsa, sour cream, and shredded cheese. Cook until the sauce is smooth and bubbling.
Step 5: Add pasta and toss to coat. If needed, thin the sauce with reserved pasta water. Stir well to combine.
Step 6: Taste and season with salt and pepper. Garnish with fresh cilantro and a dollop of sour cream. Serve hot.
Notes
For a spicier kick, add cayenne or hot sauce. Swap chicken for shrimp or black beans for a vegetarian twist. This dish is great for meal prep and reheats well!
