  • 1.5 lbs boneless chicken breast or thighs cubed
  • 2 tbsp olive oil or butter
  • 1.5 tsp cracked black pepper adjust to taste
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt to taste
  • 2 tbsp fresh parsley chopped
  • 3 cups cooked white rice jasmine or basmati

Method
 

  1. In a skillet, heat oil or butter over medium-high heat. Season chicken with salt and pepper, then sear until golden and fully cooked. Remove and set aside.
  2. In the same skillet, sauté garlic until fragrant. Add chicken broth and scrape up any browned bits. Stir in heavy cream, Italian seasoning, and cracked black pepper.
  3. Return chicken to the skillet and simmer for 5–7 minutes until the sauce thickens and coats the chicken.
  4. Spoon the creamy chicken mixture over cooked white rice. Top with chopped parsley and a dash of extra pepper if desired.

Notes
