Ingredients
  

  • 2 chicken breasts sliced
  • salt, pepper, and paprika to season chicken
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup Parmesan cheese grated
  • 8 oz ziti or rigatoni pasta cooked
  • crushed red pepper flakes & parsley for garnish

Method
 

  1. Step 1: Season chicken with salt, pepper, and paprika. Sear in oil and butter until golden. Remove and set aside.
  2. Step 2: In the same pan, sauté garlic and sun-dried tomatoes for 1–2 minutes. Add heavy cream, chicken broth, and parmesan. Simmer until slightly thickened.
  3. Step 3: Stir in spinach and let wilt. Return chicken to the pan and simmer until cooked through.
  4. Step 4: Add cooked pasta to the pan and toss to coat in sauce.
  5. Step 5: Garnish with parsley and red pepper flakes. Serve hot.

Notes

You can substitute half-and-half for heavy cream for a lighter version. Add mushrooms or peas for variety.
