  • 1 tbsp olive oil
  • 12 oz smoked sausage or kielbasa sliced
  • 1 cup orzo pasta
  • 2.25 cups chicken broth
  • 0.5 small onion finely chopped
  • 2 cups fresh spinach
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese shredded
  • 0.25 tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Step 1: In a large skillet, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  • Step 2: In the same skillet, cook the chopped onion until soft, about 2–3 minutes. Stir in orzo and toast for 1–2 minutes.
  • Step 3: Add chicken broth, bring to a simmer, and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
  • Step 4: Reduce heat to low. Stir in heavy cream, Parmesan cheese, garlic powder, spinach, and the cooked sausage. Cook until creamy and spinach is wilted.
  • Step 5: Taste and adjust with salt and pepper. Serve hot, garnished with extra Parmesan if desired.

Notes

Swap in kale for spinach or add sun-dried tomatoes for an extra punch of flavor. This recipe also works great with turkey sausage for a lighter version.
