Ingredients
  

  • 2 large chicken breasts sliced
  • 1 tbsp olive oil
  • salt & pepper to taste
  • 4 cloves garlic minced
  • 1/2 cup sun-dried tomatoes sliced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 lb penne pasta uncooked
  • 1/2 cup grated parmesan cheese
  • 2 cups baby spinach
  • cracked black pepper for topping

Method
 

  1. Step 1: Heat olive oil in a large skillet over medium-high heat. Season and sear chicken until golden and cooked through. Remove and set aside.
  2. Step 2: In the same skillet, add garlic and sun-dried tomatoes. Sauté until fragrant, about 1 minute.
  3. Step 3: Add chicken broth and cream. Stir in uncooked penne pasta. Simmer uncovered for 12–15 minutes, stirring occasionally until pasta is tender.
  4. Step 4: Stir in parmesan and baby spinach until cheese is melted and spinach is wilted.
  5. Step 5: Return chicken to the skillet, simmer 2 more minutes. Serve hot topped with cracked black pepper.
