Crockpot French Onion Meatloaf with Melted Swiss Cheese

For the Onion Topping

1tbspolive oil
1/2cupbeef broth

Instructions
Step 1: In a skillet, heat butter and olive oil over medium heat. Add sliced onions, season with salt and pepper, and cook for 15–20 minutes until golden and caramelized.
Step 2: In a large bowl, combine ground beef, egg, breadcrumbs, onion soup mix, garlic powder, Worcestershire sauce, and mozzarella cheese (if using). Mix well and form into a loaf shape.
Step 3: Add caramelized onions to the bottom of the slow cooker and pour in the beef broth. Carefully place the meatloaf on top of the onions.
Step 4: Cover and cook on LOW for 6 hours or HIGH for 3–4 hours, until the internal temperature reaches 160°F (71°C).
Step 5: Place slices of Swiss cheese over the meatloaf. Cover and let sit for 5–10 minutes to melt.
Step 6: Slice and serve warm, spooning the onion mixture over top. Garnish with fresh parsley.
Notes
For even more flavor, deglaze the onion skillet with a splash of white wine before transferring them to the slow cooker. Serve with mashed potatoes or green beans for a hearty meal.
