For the Salad
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber slices
  • 1/4 cup red onion thinly sliced
  • 1/2 cup chickpeas drained and rinsed
  • 1/2 cup green olives
  • 1/2 cup Kalamata olives
  • 1/4 cup salami slices
  • 1/4 cup prosciutto slices
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup Parmesan cheese shaved
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • salt and pepper to taste

Method
 

  1. Step 1: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper. Set aside.
  2. Step 2: In a large salad bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, chickpeas, green and Kalamata olives, salami, prosciutto, mozzarella, and Parmesan.
  3. Step 3: Drizzle the dressing over the salad and toss well to combine.
  4. Step 4: Serve immediately. Garnish with additional Parmesan or fresh parsley, if desired.
