Ingredients
  

For the Salad

  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber slices
  • 1/4 cup red onion thinly sliced
  • 1/2 cup chickpeas drained and rinsed
  • 1/2 cup green olives
  • 1/2 cup Kalamata olives
  • 1/4 cup salami slices
  • 1/4 cup prosciutto slices
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup Parmesan cheese shaved

For the Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions
 

  • Step 1: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper. Set aside.
  • Step 2: In a large salad bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, chickpeas, green and Kalamata olives, salami, prosciutto, mozzarella, and Parmesan.
  • Step 3: Drizzle the dressing over the salad and toss well to combine.
  • Step 4: Serve immediately. Garnish with additional Parmesan or fresh parsley, if desired.

Notes

This salad is flexible—swap meats or cheeses to suit your taste, or add croutons for extra crunch. Great as a meal on its own or served alongside grilled meats or pasta.
