Ingredients
  

For the Meatloaf
  • 1 1/2 lbs ground chicken
  • 1/2 cup grated Parmesan
  • 3/4 cup breadcrumbs
  • 1 egg
  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp chopped parsley
  • 1/4 cup milk
For the Creamy Parmesan Sauce
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1/2 cup shredded Parmesan
  • salt and pepper to taste

Method
 

  1. Step 1: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Step 2: In a mixing bowl, combine all meatloaf ingredients. Mix just until combined. Shape mixture into a loaf on the prepared baking sheet.
  3. Step 3: Bake for 45–50 minutes, or until golden and internal temperature reaches 165°F (74°C).
  4. Step 4: While the meatloaf bakes, make the sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  5. Step 5: Slowly whisk in milk. Simmer until thickened, then stir in Parmesan. Season with salt and pepper to taste.
  6. Step 6: Slice meatloaf, spoon warm sauce over each serving, and garnish with extra parsley.

Notes

Use ground turkey as an alternative to chicken. For a spicy kick, add crushed red pepper to the sauce. Leftovers make great sandwiches!
