Greek Chicken Gyros with Tzatziki Sauce

Ingredients
  

  • 1 ½ lbs boneless chicken breast or thighs cut into chunks
  • 3 tbsp olive oil
  • 1 lemon juiced
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • salt & black pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber grated and drained
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 2 tbsp chopped fresh dill or parsley
  • salt & pepper to taste
  • Diced tomatoes, cucumbers, red onion, pita bread, lemon wedges, fresh parsley optional toppings

Method
 

  1. Step 1: Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate 30 mins–4 hours.
  2. Step 2: Grill or pan-sear chicken until golden and fully cooked. (Or thread onto skewers and grill kebab-style.)
  3. Step 3: Mix all tzatziki ingredients in a bowl. Chill until ready to serve.
  4. Step 4: Serve chicken in warm pita or on skewers, topped with tzatziki and fresh toppings.

Notes

Use chicken thighs for juicier results. You can also meal prep this and store in the fridge for up to 3 days.
