Ingredients
  

  • 1 lb red potatoes halved
  • 8 oz green beans trimmed
  • 1/4 cup red onion thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped

Method
 

  1. Step 1: Boil halved red potatoes in salted water until fork-tender (12–15 minutes). Add green beans to the pot during the last 3 minutes. Drain and let cool slightly.
  2. Step 2: In a small bowl, whisk together olive oil, vinegar, mustard, garlic, salt, and pepper to make the dressing.
  3. Step 3: In a large bowl, toss potatoes, green beans, and red onions with the vinaigrette until evenly coated.
  4. Step 4: Sprinkle with fresh parsley and serve warm or chilled.
