Ingredients
  

  • 1.5 lbs Boneless, skinless chicken thighs cut into chunks
  • 1 tbsp Olive oil
  • Salt & pepper to taste
  • Fresh parsley or cilantro for garnish
  • Bamboo or metal skewers for grilling
  • 1/2 cup Mayonnaise
  • 2 tbsp Sweet chili sauce
  • 1 tbsp Sriracha
  • 1 tbsp Honey
  • 1 tsp Rice vinegar
  • 1 pinch Garlic powder

Method
 

  1. Step 1: In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder until smooth to make the Bang Bang sauce.
  2. Step 2: In another bowl, toss chicken chunks with olive oil, salt, pepper, and 2 tablespoons of the prepared sauce. Let marinate for 15–30 minutes.
  3. Step 3: Thread chicken onto skewers. Grill on medium-high heat for 10–12 minutes, turning often, until lightly charred and fully cooked.
  4. Step 4: Brush chicken with additional Bang Bang sauce during the final 2–3 minutes of grilling for a glossy glaze.
  5. Step 5: Remove from grill, garnish with parsley or cilantro, and serve with extra Bang Bang sauce on the side.

Notes
