- Step 1: In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder until smooth to make the Bang Bang sauce.
- Step 2: In another bowl, toss chicken chunks with olive oil, salt, pepper, and 2 tablespoons of the prepared sauce. Let marinate for 15–30 minutes.
- Step 3: Thread chicken onto skewers. Grill on medium-high heat for 10–12 minutes, turning often, until lightly charred and fully cooked.
- Step 4: Brush chicken with additional Bang Bang sauce during the final 2–3 minutes of grilling for a glossy glaze.
- Step 5: Remove from grill, garnish with parsley or cilantro, and serve with extra Bang Bang sauce on the side.
