Ingredients
  

  • 1 large sweet potato peeled and cubed
  • 1/2 lb ground beef
  • 1 tsp olive oil
  • salt & pepper to taste
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/2 cup cottage cheese
  • 1/2 avocado sliced
  • balsamic glaze for drizzling
  • chopped green onions for garnish

Method
 

  1. Step 1: Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
  2. Step 2: While potatoes roast, brown ground beef in a skillet over medium heat. Season with garlic powder, salt, and pepper. Drain excess fat if needed.
  3. Step 3: Assemble bowls by layering roasted sweet potatoes and cooked beef.
  4. Step 4: Top with cottage cheese, avocado slices, and chopped green onions.
  5. Step 5: Drizzle with balsamic glaze and serve warm.
