Ingredients
  

  • 1 lb ground beef
  • 2 cups beef broth
  • 15 oz diced tomatoes 1 can
  • 2 medium potatoes chopped
  • 1 cup corn fresh or frozen
  • 1/2 cup peas
  • 1/2 cup green beans
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • salt and pepper to taste
  • sliced corn on the cob optional, for rustic presentation

Method
 

  1. Step 1: In a large pot or Dutch oven, brown ground beef with onion and garlic over medium heat until no longer pink. Drain excess fat.
  2. Step 2: Stir in diced tomatoes, beef broth, potatoes, paprika, cumin, salt, and pepper. Bring to a boil.
  3. Step 3: Reduce heat, cover, and simmer for 25–30 minutes until potatoes are fork-tender.
  4. Step 4: Add corn, peas, and green beans. Simmer for another 10 minutes until vegetables are heated through and flavors combine.
  5. Step 5: Serve hot in bowls. Optional: Add sliced corn on the cob for extra rustic flair. Enjoy with cornbread or biscuits!
