Ingredients
  

Main Ingredients

  • 1 lb ground beef
  • 1 green bell pepper diced
  • 1 small onion chopped
  • 1 cup shredded mozzarella cheese for topping
  • 4 slices mozzarella cheese large, for rolling
  • 2 tbsp cream cheese
  • salt and pepper to taste
  • chopped parsley for garnish

Instructions
 

  • Step 1: In a skillet over medium heat, cook ground beef with chopped onion and bell pepper until the beef is browned and vegetables are softened. Season with salt and pepper. Stir in cream cheese until melted. Remove from heat.
  • Step 2: Preheat oven to 375°F (190°C). Place mozzarella slices on a baking sheet lined with parchment paper. Bake for 5–6 minutes, or until melted and flexible (but not browned).
  • Step 3: Add spoonfuls of the beef mixture to each melted cheese slice. Gently roll up each slice to form roll-ups.
  • Step 4: Sprinkle shredded mozzarella over the top of the roll-ups and bake for another 5–7 minutes until golden and bubbly.
  • Step 5: Garnish with chopped parsley and serve hot. Enjoy!

Notes

Use provolone or cheddar slices instead of mozzarella for a different flavor. These roll-ups are great with a side salad or low-carb marinara dipping sauce.
