Layered Cheesy Scalloped Potatoes

Ingredients
  

  • 2 lbs golden potatoes thinly sliced
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 2 tbsp flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese divided
  • salt and black pepper to taste
  • fresh thyme optional, for garnish

Instructions
 

  • Step 1: Preheat oven to 375°F (190°C). Grease a 9x13" baking dish.
  • Step 2: In a saucepan, melt butter over medium heat and sauté garlic until fragrant. Whisk in flour and cook for 1 minute.
  • Step 3: Gradually whisk in milk and cream. Cook until sauce thickens slightly. Stir in 1½ cups of cheddar until melted and smooth. Season with salt and pepper.
  • Step 4: Layer half of the sliced potatoes in the prepared dish. Pour over half of the cheese sauce. Repeat with remaining potatoes and sauce.
  • Step 5: Top with remaining ½ cup shredded cheddar. Cover with foil and bake for 40 minutes.
  • Step 6: Remove foil and bake for another 20–25 minutes, or until the top is golden and bubbly. Garnish with fresh thyme before serving.

Notes

Use a mandoline for evenly sliced potatoes. Try mixing in Gruyère or Monterey Jack for a twist on flavor. Great for holiday meals or cozy family dinners!
