  • 1 lb boneless skinless chicken breast or thighs cubed
  • 1 tbsp olive oil
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh grated ginger
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne optional
  • 1/2 cup tomato sauce or crushed tomatoes
  • 1/2 cup plain Greek yogurt or light coconut milk
  • salt and pepper to taste
  • fresh cilantro for garnish

Method
 

  1. Step 1: Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft and translucent. Stir in garlic and ginger, and sauté for 1 minute.
  2. Step 2: Add garam masala, cumin, paprika, and cayenne (if using). Toast the spices briefly until fragrant, about 30 seconds.
  3. Step 3: Add the cubed chicken, season with salt and pepper, and cook until browned on all sides.
  4. Step 4: Pour in the tomato sauce or crushed tomatoes. Reduce heat and simmer for 10 minutes until the chicken is cooked through.
  5. Step 5: Lower heat and stir in Greek yogurt or light coconut milk. Let simmer for another few minutes until the sauce thickens slightly.
  6. Step 6: Garnish with fresh cilantro and serve hot with rice or cauliflower rice.
