Ingredients
  

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup red onion thinly sliced
  • 1 cup fresh spinach chopped
  • 1 tsp garlic minced
  • 1/2 tsp dried oregano
  • salt & black pepper to taste
  • fresh oregano or parsley for garnish

Method
 

  1. Step 1: Heat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Step 2: Place fillets on parchment, drizzle with olive oil, and season with salt, pepper, and garlic.
  3. Step 3: Top with spinach, red onion, sun-dried tomatoes, and crumbled feta. Sprinkle dried oregano over the top.
  4. Step 4: Roast for 15–18 minutes or until salmon is cooked through and flaky.
  5. Step 5: Sprinkle with fresh herbs and serve warm!
