Ingredients
  

  • 1 medium head cauliflower cut into florets
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 tsp garlic minced
  • 1/2 tsp red pepper flakes
  • fresh parsley chopped, for garnish

Method
 

  1. Step 1: Preheat oven to 425°F (220°C).
  2. Step 2: In a bowl, whisk together miso, soy sauce, olive oil, rice vinegar, and garlic.
  3. Step 3: Toss the cauliflower florets in the miso mixture until well coated.
  4. Step 4: Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through.
  5. Step 5: Garnish with red pepper flakes and fresh chopped parsley before serving.
