Ingredients
  

  • 1 tbsp olive oil
  • 12 oz Andouille sausage sliced
  • 1 small onion diced
  • 1 green bell pepper diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 cans red kidney beans 15 oz each, drained
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp thyme
  • salt & black pepper to taste
  • 2 cups cooked white rice
  • chopped parsley for garnish

Method
 

  1. Step 1: Heat olive oil in a large pot over medium heat. Add diced onion, celery, and bell pepper. Sauté until softened, about 5 minutes.
  2. Step 2: Stir in garlic and sliced Andouille sausage. Cook until sausage is browned and fragrant, about 5 more minutes.
  3. Step 3: Add drained red beans, chicken broth, smoked paprika, cayenne, thyme, salt, and pepper. Stir to combine. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 30–40 minutes, stirring occasionally.
  4. Step 4: Serve hot over white rice. Garnish with chopped parsley and extra black pepper if desired.
