- Step 1: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or grease lightly.
- Step 2: In a large bowl, toss together chicken, bell peppers, and onion with olive oil and all spices. Mix until evenly coated.
- Step 3: Spread the seasoned chicken and vegetables in a single layer on the sheet pan.
- Step 4: Roast in the oven for 20–25 minutes, or until chicken is fully cooked and veggies are tender.
- Step 5: Remove from the oven, squeeze fresh lime juice over top, and garnish with chopped cilantro.
- Step 6: Serve hot with warm tortillas and your favorite toppings like sour cream, guacamole, or salsa.
