Ingredients
  

  • 4–6 boneless pork chops
  • 1.5 lbs baby potatoes halved
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp flour
  • 2 tbsp butter
  • 2 cups chicken broth
  • 1 tsp fresh thyme or 1/2 tsp dried
  • salt and black pepper to taste
  • 1 tbsp olive oil for searing

Method
 

  1. Step 1: Season pork chops with salt and pepper. In a skillet or Dutch oven, heat olive oil over medium-high heat and sear chops until golden brown on both sides. Remove and set aside.
  2. Step 2: In the same pan, melt butter. Add onions and garlic and sauté until softened. Stir in flour to form a roux, then slowly whisk in chicken broth. Add thyme and simmer until slightly thickened.
  3. Step 3: Add halved potatoes and seared pork chops back to the pan. Spoon gravy over the top to coat evenly.
  4. Step 4: Cover with lid or foil and bake at 375°F (190°C) for 40–45 minutes, until pork is tender and potatoes are fork-soft.
  5. Step 5: Garnish with fresh thyme and serve hot with crusty bread or sautéed greens.

Notes
