Ingredients
  

For the Chicken
  • 2 large chicken breasts or boneless thighs
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1/2 tsp paprika smoked if preferred
  • 1 tsp minced garlic
  • salt and pepper to taste
For the Garlic Parmesan Potatoes
  • 1 lb baby potatoes halved
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 2 tbsp grated parmesan cheese
  • salt and pepper to taste
  • chopped parsley for garnish (optional)
For the Hot Honey Whipped Feta
  • 1/2 cup feta cheese
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 tsp hot honey or honey + chili flakes
  • 1/2 tsp lemon zest
  • 1 tbsp olive oil

Method
 

  1. Step 1: Combine chicken, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl. Marinate for at least 15 minutes (up to 30).
  2. Step 2: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, garlic powder, parmesan, salt, and pepper. Roast for 25–30 minutes, flipping halfway.
  3. Step 3: Grill or pan-fry marinated chicken over medium heat, 5–7 minutes per side, until cooked through and charred. Internal temp should be 165°F (74°C).
  4. Step 4: Blend feta, Greek yogurt, hot honey, lemon zest, and olive oil in a food processor until smooth. Adjust flavor with more honey or yogurt as needed.
  5. Step 5: Plate sliced chicken and roasted potatoes. Add whipped feta and garnish with parsley. Serve with lemon wedges if desired.

Notes

Marinate longer for deeper flavor. Toss potatoes with cornstarch for extra crispiness. No grill? Bake chicken at 400°F (200°C) for 20 mins. Use block feta for the best whipped texture.
