- Step 1: Combine chicken, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl. Marinate for at least 15 minutes (up to 30).
- Step 2: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, garlic powder, parmesan, salt, and pepper. Roast for 25–30 minutes, flipping halfway.
- Step 3: Grill or pan-fry marinated chicken over medium heat, 5–7 minutes per side, until cooked through and charred. Internal temp should be 165°F (74°C).
- Step 4: Blend feta, Greek yogurt, hot honey, lemon zest, and olive oil in a food processor until smooth. Adjust flavor with more honey or yogurt as needed.
- Step 5: Plate sliced chicken and roasted potatoes. Add whipped feta and garnish with parsley. Serve with lemon wedges if desired.
