  • 2 cups grated sweet potato
  • 1 cup grated zucchini squeezed to remove excess water
  • 2 eggs beaten
  • 1/4 cup all-purpose flour or almond flour for gluten-free
  • 1/4 cup Parmesan cheese grated
  • 2 green onions chopped, plus extra for garnish
  • 2 cloves garlic minced
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 2 tbsp olive oil for frying

Method
 

  1. Step 1: In a large bowl, combine grated sweet potato, zucchini, eggs, flour, Parmesan, green onions, garlic, smoked paprika, salt, and pepper. Mix until well combined.
  2. Step 2: Scoop about 2 tablespoons of the mixture and flatten into small patties using your hands or a spoon.
  3. Step 3: Heat olive oil in a large skillet over medium heat. Cook fritters in batches, about 3–4 minutes per side, until golden brown and crispy.
  4. Step 4: Transfer to a paper towel-lined plate to drain excess oil. Garnish with extra green onions and serve warm with your favorite dipping sauce.

Notes
