Ingredients
  

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can black beans drained
  • 1 cup corn kernels
  • 1 can diced tomatoes drained
  • 1 packet taco seasoning
  • 1.5 cups cheddar cheese shredded
  • 1/4 cup green onions chopped

Instructions
 

  • Step 1: In a large skillet, brown the ground beef over medium heat. Add taco seasoning and cook until well combined.
  • Step 2: Stir in cooked rice, drained black beans, corn, and diced tomatoes.
  • Step 3: Spread the mixture evenly into a baking dish. Top with shredded cheddar cheese.
  • Step 4: Bake at 375°F (190°C) for 15–20 minutes, until cheese is melted and bubbly.
  • Step 5: Remove from oven and garnish with chopped green onions. Serve hot.

Notes

Add jalapeños or hot sauce for a kick. Serve with sour cream or tortilla chips for extra crunch. Great for leftovers too!
