Instructions
Step 1:
In a large skillet, brown the ground beef over medium heat. Add taco seasoning and cook until well combined.
Step 2:
Stir in cooked rice, drained black beans, corn, and diced tomatoes.
Step 3:
Spread the mixture evenly into a baking dish. Top with shredded cheddar cheese.
Step 4:
Bake at 375°F (190°C) for 15–20 minutes, until cheese is melted and bubbly.
Step 5:
Remove from oven and garnish with chopped green onions. Serve hot.
Notes
Add jalapeños or hot sauce for a kick. Serve with sour cream or tortilla chips for extra crunch. Great for leftovers too!
