Ingredients
  

  • 4 fresh or frozen waffles toasted or pressed until crisp
  • 1 cup shredded cheddar cheese
  • 1.5 cups sliced smoked brisket
  • 2 tbsp bourbon
  • 2 tbsp maple syrup
  • 1 tsp brown sugar
  • butter or oil for grilling
  • extra maple syrup for drizzling

Method
 

  1. Step 1: In a small saucepan over medium heat, combine bourbon, maple syrup, and brown sugar. Simmer until slightly thickened. Toss sliced brisket in the glaze and warm through.
  2. Step 2: Assemble sandwiches by layering cheddar cheese, bourbon-maple brisket, and more cheese between two toasted waffles. Repeat for second sandwich.
  3. Step 3: Lightly butter the outside of waffles. Grill sandwiches in a skillet or panini press over medium heat until golden and cheese is melted, about 3–4 minutes per side.
  4. Step 4: Slice sandwiches in half or quarters. Drizzle with warm maple syrup and serve immediately.

Notes

Try using sharp white cheddar or smoked gouda for an extra punch. Works great with leftover BBQ brisket!
