For the Watermelon Fries
  • 1 small seedless watermelon cut into fry-like sticks
  • 1 lime zest only
  • 1/2 lime juice only
  • chili powder pinch, optional
  • sea salt to taste
For the Coconut Lime Dip
  • 1/2 cup plain Greek yogurt or coconut yogurt
  • 2 tbsp shredded coconut unsweetened
  • 1 tbsp lime juice
  • 1/2 lime zest only
  • 1 tsp honey or maple syrup optional, for sweetness

Method
 

  1. Step 1: Slice watermelon into fry-like sticks and arrange on a plate or tray.
  2. Step 2: Sprinkle with lime zest, juice, a light pinch of chili powder (if using), and sea salt. Chill until ready to serve.
  3. Step 3: In a small bowl, mix yogurt, shredded coconut, lime juice, lime zest, and optional honey or maple syrup until smooth.
  4. Step 4: Garnish dip with extra lime zest if desired. Serve chilled with watermelon fries.
