Ingredients
  

  • 12 oz Rotini pasta
  • 1 cup Cherry tomatoes halved
  • 1 small Zucchini diced
  • 1/3 cup Black olives sliced
  • 1/4 cup Red onion thinly sliced
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh parsley chopped
  • 1/2 cup Italian dressing store-bought or homemade
  • Salt & pepper to taste

Method
 

  1. Step 1: Boil rotini pasta according to package directions. Drain and rinse under cold water to stop cooking and cool down quickly.
  2. Step 2: In a large mixing bowl, combine cooled pasta, cherry tomatoes, diced zucchini, olives, red onion, crumbled feta, and parsley.
  3. Step 3: Pour in Italian dressing. Toss well until all ingredients are evenly coated. Season with salt and pepper to taste.
  4. Step 4: Cover and refrigerate for at least 30 minutes to let the flavors meld.
  5. Step 5: Before serving, give the salad a final toss and enjoy chilled!
