- Step 1: Grate zucchini and squeeze out as much moisture as possible using a clean towel.
- Step 2: In a bowl, combine zucchini, eggs, Parmesan, flour, garlic powder, salt, pepper, and parsley (if using).
- Step 3: Add a thin layer of olive oil to a skillet over medium heat.
- Step 4: Drop spoonfuls of batter into hot oil. Flatten slightly and cook 2–3 minutes per side until golden and crisp.
- Step 5: Transfer to a paper towel-lined plate. Sprinkle with extra Parmesan and garnish with herbs.
