Ingredients
  

  • 2 medium zucchinis grated and squeezed dry
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • 2 tbsp chopped parsley optional
  • olive oil for frying
  • extra Parmesan for topping

Method
 

  1. Step 1: Grate zucchini and squeeze out as much moisture as possible using a clean towel.
  2. Step 2: In a bowl, combine zucchini, eggs, Parmesan, flour, garlic powder, salt, pepper, and parsley (if using).
  3. Step 3: Add a thin layer of olive oil to a skillet over medium heat.
  4. Step 4: Drop spoonfuls of batter into hot oil. Flatten slightly and cook 2–3 minutes per side until golden and crisp.
  5. Step 5: Transfer to a paper towel-lined plate. Sprinkle with extra Parmesan and garnish with herbs.
