Golden, crispy chicken breasts with a tangy lemon butter sauce. This easy skillet dinner is packed with flavor thanks to a savory Parmesan crust and fresh herbs—perfect for weeknights or entertaining guests.
Step 1: Pound chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
Step 2: In one shallow bowl, whisk the eggs. In another, mix Parmesan cheese, flour, garlic powder, paprika, salt, and pepper.
Step 3: Dip each chicken breast into the eggs, then dredge in the Parmesan mixture, pressing to adhere.
Step 4: Heat olive oil or butter in a large skillet over medium heat. Cook the chicken for 3–4 minutes per side, or until golden brown and cooked through. Remove and set aside.
Step 5: In the same skillet, add chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits. Stir in butter and simmer for 2–3 minutes.
Step 6: Return chicken to the skillet, spoon sauce over the top, and simmer for 2 minutes. Garnish with fresh parsley and lemon slices.
Notes
For extra crispiness, add panko breadcrumbs to the Parmesan coating. This dish is delicious with mashed potatoes, rice, or sautéed greens.
