Ingredients
  

For the Chicken

  • 4 boneless, skinless chicken breasts
  • salt and black pepper to taste
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup olive oil or butter for cooking

For the Lemon Sauce

  • 2 lemons juiced (plus slices for garnish)
  • 1/2 cup chicken broth
  • 2 tbsp unsalted butter
  • fresh parsley chopped, for garnish

Instructions
 

  • Step 1: Pound chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
  • Step 2: In one shallow bowl, whisk the eggs. In another, mix Parmesan cheese, flour, garlic powder, paprika, salt, and pepper.
  • Step 3: Dip each chicken breast into the eggs, then dredge in the Parmesan mixture, pressing to adhere.
  • Step 4: Heat olive oil or butter in a large skillet over medium heat. Cook the chicken for 3–4 minutes per side, or until golden brown and cooked through. Remove and set aside.
  • Step 5: In the same skillet, add chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits. Stir in butter and simmer for 2–3 minutes.
  • Step 6: Return chicken to the skillet, spoon sauce over the top, and simmer for 2 minutes. Garnish with fresh parsley and lemon slices.

Notes

For extra crispiness, add panko breadcrumbs to the Parmesan coating. This dish is delicious with mashed potatoes, rice, or sautéed greens.
